Pesto Pasta - a healthy and tasty kids version pesto pasta recipe.
Pesto Pasta
Pesto pasta is prepared by making a pesto purée first then mixed it with the cooked pasta and add veggies of your choice.
This recipe is kid’s favourite and healthy too. Adjust the green chilli based on ur spice level. Whenever white sauce pasta feels bored, you can give it a try. It will become ur go to dinner on weekends then. Here I have added only sweetcorn but you can add any veggies or paneer, prawn or chicken too. Then it will become a balanced dish.
Ingredients:
Pasta - 2 cups
Sweet corn - 1/2 cup
Coriander leaves- 2 handful
Mint leaves - 1 handful
Green chilli- 1
Cashews- 10-12 (soaked)
Garlic - 2 cloves
Pepper powder- 1 tsp
Salt
Oil
Preparation:
1. In a large pot, add 4 cups of water , wen it boils add salt and a tsp of oil then pasta into it.
2. When it’s cooked, drain the pasta using colander and keep it aside.
3. In a blender, add coriander leaves, mint leaves, soaked cashews, green chilli and garlic. Add water and blend smooth.
4. In a pan, add 1 tbsp of oil, and add sweet corn saute for a minute.
5. Now add the pesto purée into it . Add little water and allow it to cook for sometime.
6. Add desired salt and pepper powder and adjust the consistency.
7. Now add cooked pasta into it and mix thoroughly.
8. Healthy and yummy pesto pasta is ready to serve!!
