Description:

Rose Pudding, a delicious set pudding made with milk, rose extract, sugar, condensed milk and agar agar. Traditionally this pudding is made during Ramadan and it taste like rose milk.

The pudding is completely vegetarian because the pudding is made to set using agar agar which is a vegetarian setting agent. But you can easily swap it for gelatin.

Like all pudding this is made with milk, sugar and rose extract for flavouring. In addition to sugar, I like to add some sweetened condensed milk which makes the pudding mixture creamy which results in a silky china grass pudding. For flavouring the pudding I used rose milk extract which already has the pink colour and rose flavour. But you can optionally use some clear rose extract and pink food colouring.

China grass or agar agar is a natural body coolant so perfect to use during summer. Agar agar is available in powder form and in strands. Personally I like powder form as it is easy to use and melts quickly.

 

Ingredients:

Agar agar - 5 gms

Sugar - 1/2 cup

Water - 1 cup

Milk - 1 cup

Rose milk essence - 1 tsp

Condensed milk- 2 tbsp

Chopped nuts

Rose petals 


Preparation:

1. In a saucepan, add 1 cup of water and wen it boils, add agar agar and mix well

2. Whisk it well and allow it to boil till the agar agar strands dissolve in water completely 

3. Stir it in between so tat it dissolved completely 

4. Wen agar agar dissolved, it looks like a water 

5. Now add 1/2 cup sugar into it and boil

6. Meanwhile Take 1 cup of milk , add 2 tbsp condensed milk into it 

7. Mix it well and keep it ready 

8. Wen the sugar mix well with water and agar agar, switch off the flame 

9. Remove the saucepan from the flame 

10. Now add milk + condensed mixture into it and mix well

11. Add 1 tsp rose esssence into it and whisk it for even mixing .

12. Now it turns pinky …

13. Strain it using a strainer, and discard the remaining.

14. Transfer it to a serving mould or pudding bowls.. 

15. Garnish with nuts and rose petals ..

16. Refrigerate it atleast for an hour .

17. Serve chill and enjoy!!!!!!
