Mushroom Fry - a healthy and appetising veg starter Indian style recipe made with simple ingredients.
Mushroom Fry
Mushroom fry is prepared by sliced marinating mushroom with yogurt and
some spices, then roast it with chopped onion and garlic. When it’s cooked,
the mushroom oozes out its flavour and roast it well till crisp.
Serve it with chapathi,naan,pulav or you can use it as a filling for sandwiches.
Ingredients:
Button mushroom- 400 gms
Yogurt- 1/2 cup
Ginger garlic paste- 1 tsp
Red chilli powder- 1 tsp
Coriander powder- 1 tsp
Garam masala- 1 tsp
Turmeric powder- 1/4 tsp
Onion - 1 ( finely chopped)
Garlic- 1 tbsp (finely chopped)
Fennel seeds- 1 tsp
Cumin seeds- 1/2 tsp
Grated coconut- 2 tbsp
Oil - 2 tbsp
Curry leaves- a spring
Coriander leaves
Red chilli- 4
Salt
Preparation:
1. Clean mushroom and slice into 3-4 slices depending on the size.
2. To a mixing bowl add mushrooms along with thick curd, ginger garlic paste, salt to taste, turmeric powder, red chilli powder, coriander powder, garam masala powder.
3. Mix it well so that the masala are coated well.Do not add water. Keep it aside.
4. Take a pan add fennel seeds,dry roast it until crispy
5. Crush it coarsely and keep it aside
6. Now to the same pan add oil, cumin seeds let it splutter, add few curry leaves ,4 red chillies, fennel seeds powder and chopped garlic.
7. Saute it until garlic turns golden color.
8. Add finely chopped onion along with salt.
9. Now Add the mushroom marinade
10. Saute it in a medium flame
11. It will start letting out water. Cook covered in medium heat
12. Now give a gud stir then cook in medium heat until it becomes dry.
13. Keep stirring in between and cook until almost dry and roasted well
14. Add coriander leaves and grated coconut. Though coconut is optional it gives a nice texture to the fry.
15. Switch off the flame and serve hot.
