Aval or Poha Laddu are festive sweet balls made with flattened rice and grated coconut.

Description:

Aval or Poha Laddus is prepared by using flattened rice, grated coconut, nuts and sugar. Dry roast everything and make laddus out of it. 
Poha is rich in iron, carbohydrates and low on gluten. It is easily digestible and good probiotic food. It controls blood sugar levels and low in calories. Anybody can have it guilt free.

Ingredients:

Aval (flattened rice) - 2 cups

Grated coconut- 1 cup

Chopped nuts (Almond, cashew) - 2 tbsp

Sugar- 1/4 cup

Water- 1/4 cup

Cardamom powder- 1/2 tsp 

Preparation:

1. In a pan, dry roast the aval on medium flame until it become crisp.

2. Transfer to a bowl and gently crush it by hands 

3. In the same pan, add grated coconut and dry roast on a low flame until it turns golden and aromatic.

4. Add chopped nuts and roast for a minute. Keep it aside 

5. In a separate pan, add sugar, water and cardamom powder . Stir on medium flame until the sugar dissolves.

6. Now take a bowl, add crushed aval , grated coconut and nuts together.

7. Pour sugar syrup into it. Mix everything together using a spoon 

8. The mixture should be slightly sticky but easy to handle .

9. While the mixture is still warm, take a small portions and shape laddus 

10. If the mixture is too dry, add ghee and shape laddus.

11. Store it in an airtight container and happy snacking!!!!!
