Aval or Poha Laddu are festive sweet balls made with flattened rice and grated coconut.

  Aval or Poha Laddu Description: Aval or Poha Laddus is prepared by using flattened rice, grated coconut, nuts and sugar. Dry roast everything and make laddus out of it.  Poha is rich in iron, carbohydrates and low on gluten. It is easily digestible and good probiotic food. It controls blood sugar levels and low in calories. Anybody can have it guilt free. Ingredients: Aval (flattened rice) - 2 cups Grated coconut- 1 cup Chopped nuts (Almond, cashew) - 2 tbsp Sugar- 1/4 cup Water- 1/4 cup Cardamom powder- 1/2 tsp  Preparation: 1. In a pan, dry roast the aval on medium flame until it become crisp. 2. Transfer to a bowl and gently crush it by hands  3. In the same pan, add grated coconut and dry roast on a low flame until it turns golden and aromatic. 4. Add chopped nuts and roast for a minute. Keep it aside  5. Kerala Style Roasted Chicken Description: Kerala style roasted chicken preparation begins with marinating the chicken with traditional spices which later pan roasted in coconut oil . The coconut oil and curry leaves enhances the flavour of the dish and stands unique in their own way. This pan roasted chicken is a delectable dish that shows the vibrant and aromatic flavours of Kerala.   Mango Sheera / Mango Kesari Description: Mango sheera or Mango kesari is an easy dessert made using ripened mango pulp, semolina and ghee. It’s always a hit our home .  Mango sheera is perfect to serve in parties, get togethers and for special occasions like celebrations, festivals. Ingredients: Semolina- 1 cup Sugar- 3/4 cup Mango pulp - 1 cup Ghee - 3 tbsp Cardamom - 3 (powdered) Chopped nuts - 1/4 cup Water- 1 1/2 cup Saffron- a pinch (optional) Preparation: 1. Add Ghee to a heavy bottom pan, add semolina to it. On a low heat, dry roast till you get nice aroma. Do not brown the rava but it has to turn crunchy. Transfer this to a bowl and keep it aside. 2. Carrot Chutney Description: The carrot chutney recipe is extremely simple to prepare yet tastes amazing .
