Kerala Style Roasted Chicken


Description:

Kerala style roasted chicken preparation begins with marinating the chicken with traditional spices which later pan roasted in coconut oil . The coconut oil and curry leaves enhances the flavour of the dish and stands unique in their own way.
This pan roasted chicken is a delectable dish that shows the vibrant and aromatic flavours of Kerala.

Ingredients:

Chicken- 1/2 kg

Shallots - 1/4 cup 

Ginger - a small piece 

Garlic - 10 cloves 

Green chilli - 2

Curry leaves - one handful 

Coconut oil 

Kashmiri red chilli 

Salt 


For Marination:

Chicken- 1/2 kg

Kashmiri red chilli- 2 tsp

Turmeric powder- 1 tsp

Coriander powder- 2 tsp

Garam masala powder- 1 tsp

Pepper powder- 1 tsp

Curry leaves 

Fresh coconut- 1/2 cup (roughly chopped)

Salt - 1 tsp 

Preparation:

1. Marinate the chicken with the things listed under marination for half an hour.Keep it aside .

2. In a pan, add coconut oil, curry leaves sautee it

3. Then add (shallots, ginger, garlic, green chilli) paste and dried Kashmiri chilli and give a gud mix.

4. Once the raw smells is gone and leaves oil, add the marinated chicken into it.

5. Let it blend well with the masala, and cover it.

6. Allow it to cook for 5 mins. Give a stir in between.

7. Check once the chicken is cooked or not, then sprinkle curry leaves at last and it gives nice aroma to the dish.

8. Kerala style chicken roast is ready to serve!
