Carrot Chutney


Description:

The carrot chutney recipe is extremely simple to prepare yet tastes amazing . It’s one of the best alternatives to onion and tomato based chutney. 

Ingredients:  

Oil -1 tbsp 

Urad dal - 1 tsp

Chana dal - 1 tsp

Dried red chilli- 4

Garlic clove-2

Carrot- 1 cup (peeled and chopped)

Coconut- 1/2 cup (grated)

Tamarind- a pinch 

Salt - to taste

For Temper: 

Oil 

Mustard seeds 

Jeera seeds

Dried red chilli 

Curry leaves 

Hing

Preparation:

1. Heat 1 teaspoon oil in a pan. Add chana dal, urad dal and red chilies. Fry them until light golden.

2. Add Curry leaves , tamarind and garlic. Fry for another 1 to 2 mins.

3. When the lentils turn deep brown, give a quick stir. Remove to a plate for cooling.

4. Pour another 1 to 2 tsps oil to the pan. Add carrots(chopped)and coconut along with this. Stir fry for 3 to 4 mins on a high heat and then reduce the flame.

5. Once the coconut turns golden brown color, transfer to a plate for cooling .

6. Transfer everything to a grinder jar and grind everything to make fine paste.

7. Add required water to get the smooth consistency.

8. Pour 1 tablespoon coconut oil to the hot pan. When the oil is hot enough, add mustard seeds, cumin seeds, 1 broken dried red chili, 1 sprig curry leaves and a pinch of hing. Fry until the leaves turn crisp.

9. Turn off and pour this to chutney.

10. Serve it with dosa, idly!!!
