  COCONUT MILK RASAM Rasam is  thin, soup-like dish that are very popular in South India. Most of the rasam varieties are beneficial for the health as they are good for curing colds and coughs. On this post, I have shared one of my favorite rasam recipes, Coconut Milk Rasam, a specialty from Tamil Nadu. Made with thick coconut milk, tamarind extract, rasam powder and spices.  This coconut milk rasam is cherished for its creamy texture, coconut flavor, and a perfect blend of tanginess and spiciness. MUTTON CHUKKA Mutton Chukka is a spicy dry curry made by cooking evenly cut small chops of mutton with tempered onions, spices and masala powders. Since we are making the masala fresh gives a unique aroma to this dish .  It tastes spicy and go well with rice , pulao  and all one pot rice varieties. Ingredients : Mutton - 1/2 kg Cooking Oil - 2 tbsp  Sesame Oil - 2 tbsp Turmeric powder  - 1 tsp Salt - 1 tbsp  Shallots - 1 cup Fennel seeds- 1 tsp Curry leaves- 2 springs  To make Chukka masala  : Pepper corn - 1 tsp Coriander seeds - 1 tsp Fennel seeds - 1 tsp Jeera -1/2 tsp Cinnamon - 1 small stick Clove - 2 Cardamom -2 Red chilli -5 Curry leaves - 1 spring Preparation : 1. RESTAURANT STYLE BUTTER CHICKEN   Butter chicken is prepared with marinated chicken that's first grilled and then served in a rich gravy made with tomato, butter, and a special spice blend as a base. Unlike most Indian curries where the preparation of the base starts with a blend of onion and a ginger garlic paste cooked in oil, butter chicken uses tomato as a base and is cooked in butter, giving it a slightly sweet flavor.   MUTTON LIVER PEPPER FRY  Mutton liver is considered to be a good source of Vitamin A, that is beneficial for eyes.  Mutton liver satiates hunger as it is high in protein content thereby relieving the body of weight gain.  Mutton liver also contains iron, folic acid, zinc, copper, Vitamin B12 and folate.  It is very good for young children, pregnant ladies and for lactating young moms. One point you have to keep in mind is, never overcook liver since it tends to become hard and rubbery.   Pirandai / Adamant Creeper Chutney Health Benefits of  Pirandai Plant / Adamant Creeper  : Pirandai / Adamant creeper is a very good source of calcium and fiber so I highly recommend taking this twice a week. It helps with constipation, helps our bones become stronger. It can be taken by all age groups for it’s health benefits. It will help in the removal of blocks in blood vessels so that blood circulation to the heart will be regular. Heart function will become normal and effective. We usually make chutney out of it in our house . Pregnant women can also have it. Since people with lactose intolerance can have it for calcium intake.  The only work it takes is to remove the veins that runs along the ribbed length of the creeper.
