Sweet Potato and Sprouts Masal Dosa
This Masal dosa is very popular in all Indian restaurants served as a breakfast. It is very filling since we have added stuffing in it. I choose to add sprouts to make it nutritious & crunchy and sweet potatoes to make it fibre rich breakfast.
Sweet Potato is very nutritious because it contains antioxidants, anti-inflammatory nutrients, and blood sugar-regulating nutrients. It's good to add it to your diet.
Ingredients:
Dosa batter - 1 cup
Sweet potato- 250 gms
Moong sprouted- 1 cup
Oil - 2 tbsp
Mustard seeds- 1/2 tsp
Curry leaves- a handful
Green chilli- 2 (chopped)
Onion- 2 (finely chopped )
Ginger-1 tbsp (finely chopped)
Turmeric powder -1 tsp
Coriander leaves- a handful
Preparation:
1. Boil the sweet potatoes, peel the skin and mash it using fork . Keep it aside.
2. Keep the dosa batter ready.
3. Keep the moong sprouts ready.
4. In a pan, add oil and mustard. Wen it splutters add curry leaves, green chilli and onion.
5. Add chopped ginger also and saute it till the onion turns golden.
6. Add turmeric powder and salt into it
7. Now add mashed sweet potatoes and moong sprouts and mix thoroughly.
8. Adjust the salt at this stage and garnish with coriander leaves.
9. Heat a tawa on medium flame. Pour a dollop of dosa batter and spread it like a pancake but thinner.
10. Drizzle oil around the edges. When you see the base has become golden, and the edges separate from the pan, flip it to the other side.
11. Now flip it again and add the masala we prepared and spread it on one side of the dosa.
12. Fold it and remove from tawa.
13. Serve hot with chutney and sambar!!
