Description:

Sweet potato pancake can be prepared by adding mashed sweet potato into the regular pancake batter. But the nutritional benefits is tremendous.

Sweet potato should br essential in our diet since it includes;
* These sweet potatoes are root vegetables and very high in starch, fiber, Vitamins(A, C, B6) and minerals(Manganese, Potassium, Copper & Niacin)
* Further, sweet potatoes help in promoting gut health and digestion.
* An abundant amount of antioxidants help in good brain health, gut health and immune system health.
* Moreover, these potatoes help in reducing inflammation and in turn may help as an anti-cancer agent. However, studies are still going on to prove these.
* Above all, sweet potatoes are rich in beta-carotene and anthocyanins, antioxidants that may help prevent vision loss and improve eye health.

Ingredients:

Sweet potato - 2 (medium size)

Wheat flour- 1 cup

Eggs - 2

Lukewarm milk - 1/2 cup

Brown sugar- 1/4 cup

Cinnamon powder- 1/4 tsp

Baking powder- 1/2 tsp 

Ghee - 2 tbsp 

Preparation:

1. Wash the sweet potatoes in running water and rough chopped into big sizes.

2. Take a pressure cooker add water into it. Add sweet potato and cook for a whistle.

3. Alternatively, yu can steam cook it. 

4. Once it’s cooked, check it using fork. It has to get in smoothly.

5. Once it’s cooled down, peel the skin and mash well. Keep it aside.

6. Take a mixing bowl, add all the dry ingredients, wheat flour, cinnamon powder, baking powder, brown sugar.

7. Mix everything well and add eggs and mashed sweet potatoes.

8. Finally, add lukewarm milk to adjust the consistency of the batter.

9. The batter should be slightly thick not running consistency.

10. Heat a non stick tawa, add a tsp of gheeand the pancake batter.

11. Cover with a lid and Keep the flame low. 

12. Now turn and cook the other side since we have added brown sugar, it may get brown soon. 

13. Do the same in batches with the remaining batter.

14. Serve it with honey or maple syrup.
