Sambar Rice - a South Indian meal packed with rice dal veggies and spices.

Description:
Sambar rice is served as a variety rice in restaurants. It’s prepared by cooking rice and dal with veggies and spices.
Sambar rice should serve warm and the ghee tastes enhances the flavour of the dish. I always prefer carrot, drumstick and beans for sambar rice . Always prepared in a running consistency since it turns thick once cooled.I have used store bought sambar powder but if yu prefer yu can make at home too.Serve it with potato chips , papad or any fryums.
Ingredients:
Rice - 1/2 cup
Toor dal - 1/4 cup
Oil - 2 tbsp
Ghee- 3 tbsp
Shallots- 1/4 cup
Carrot- 1/4 cup (cubed)
Brinjal - 2
Beans - 1/4 cup (chopped)
Drumstick- 1 (chopped into 2 inches)
Turmeric powder- 1 tsp
Sambar powder- 2 tbsp
Tamarind paste- 1 tbsp
Mustard seeds- 1 tsp
Curry leat- one handful
Dried red chilli-2
Asafoetida- a pinch
Coriander leaves- a handful
Salt
Preparation :
1. Measure dal and rice , wash and soak for atleast 10 mins. Rice should be doubled the quantity of dal.
2. Pressure cook for 5 whistles and once pressure releases open and mash it with ladle .
3. In a pan, add oil , ghee and mustard seeds into it. Wen it splutters add shallots, curry leaves, dry red chilli saute for 2 mins.
4. Then add tomato and saute till it turns mushy .
5. Add all the veggies and turmeric powder and salt. Add water and Allow it to cook for 5 mins.
6. Once the veggies gets cooked, add tamarind paste and sambar powder. Let it gets mixed with all the veggies. Adjust salt at this stage.
7. Finally add the cooked rice and dal. Mix it thoroughly .
8. Add a tbsp of ghee and garnish with coriander leaves.
9. Serve hot with papad or fryums!!
