Rice Kheer Recipe - The Indian version of sweet pudding basically a milk based dessert.
Rice Kheer
Rice kheer is a traditional North Indian dessert where rice is boiled in milk and sugar, nuts were added for taste.
It will be served in all the main functions like marriages and get together, even prepared this specially for pooja too. We exam serve it hot or keep it refrigerated and serve cool.
It’s a milk based dessert so can’t you keep for lond. Since the rice is cooked in milk, it delicious and saffron enhances the flavour of this dish.
Ingredients:
Milk - 1 ltr(full fat milk)
Basmati Rice- 1/4 cup
Sugar - 1/2 cup
Cardamom powder- 1/4 tsp
Chopped nuts - 1/4 cup
Ghee- 2 tbsp
Saffron- a pinch
Preparation:
1. Wash rice thrice and drain completely.
2. Coarse grind the rice in blender to make it easy to cook.(this step is optional but I prefer)
3. Pour water (if using) and milk to a heavy bottom pot . Bring it to a boil on a medium heat and stir in the rice.
4. Continue to cook on a medium heat, until the rice is soft, completely cooked and mushy. keep stirring every 3 minutes to prevent the milk getting scorched at the bottom.
5. Pour sugar by this stage and stir well. Once sugar dissolves,It will be in a running consistency.
6. Add cardamom powder and saffron and give a gud mix.
7. Meanwhile fry the chopped nuts ,i have taken almond and unsalted pistachios. Pour into the kheer and add ghee into it.
8. Transfer to the serving bowl and enjoyyy!
