Pineapple Kesari
Pineapple kesari is a popular sweet made in South India, especially in marriages and functions. With just rava/ semolina/ sooji and pineapple, sugar and ghee as main ingredients, this sweet is ready in minutes. Very easy to prepare but the taste and flavour is mind blowing.
Ingredients:
Semolina (Rava) - 1 cup
Pineapple chunks- 1 cup
Sugar - 1 cup
Ghee - 5 tbsp
Cashews- 10
Saffron- a pinch
Cardamom powder- 1/4 tsp
Water- 2 1/2 cup
Preparation:
1. Take a heavy bottom kadai, add 2 tbsp of ghee.
2. Fry the cashews nd keep it aside.Retain the ghee in the kadai.
3. Add semolina in the kadai nd roast it well till it turns crispy. Make sure it doesn’t get burnt .
4. Switch off the flame nd transfer it to a plate.
5. In the same kadai, add ghee and chopped pineapple pieces into it.saute it for some time, it helps to bring nice flavour from pineapple.
6. Cover and cook it till becomes soft.
7. Now add water and a pinch of saffron into it.
8. Once the water brings to boil, add semolina in one hand and stir it in another hand to avoid lumps.
9. Once the semolina gets cooked, the texture will be glossy and transparent. Now add sugar and cardamom powder and mix well.
10. Keep covered and cook for sometime on the lowest heat. Turn off and let rest for 5 mins.
11. Add roasted cashews and ghee at last , it gives nice aroma to the dish .
12. Serve hot and enjoy!!!
