Chilli garlic fried rice spicy and tasty dish popular in Indo Chinese cuisine
Instead of having regular fried rice this chilli garlic fried rice is super spicy and flavourful. Those who loves to have garlic will like it.
Ingredients:
Dry red chilli - 6
Garlic - 10 cloves
Basmati Rice- 2 cups
Oil- 1/4 cup
Ginger- 1 tsp (finely chopped)
Garlic- 2 tbsp (finely chopped)
Green chilli- 2 (finely chopped)
Onion- 2 (finely chopped)
Carrot - 1/4 cup (finely chopped)
Beans- 1/4 cup (finely chopped)
Capsicum- 1/4 cup (finely chopped)
Soy sauce- 1 tsp
Vinegar- 1 tsp
Salt - 1 tsp
Sugar- 1 tsp
Pepper powder- 1/2 tsp
Spring onion
Preparation:
1. Wash and rinse the rice at least three times with normal water to remove excess starch. Drain the water and keep it aside.
2. Ina heavy bottomed pan, heat water for about 4 cups and bring to boil.
3. Once it’s boiling, add the rice and cook on medium flame till the rice is cooked like 90%. Drain the rice using strainer nd keep aside.
4. Every grain has to be separate else it will become mushy while tossing.
5. Make chilli garlic paste by soaking red chilli in hot water for 10 mins.
6. Then drain the water and grind along with garlic. It should be a coarse paste not fine one.
7. Heat oil in a wok and add chilli garlic paste , saute for 3 mins. Let the raw smell goes off.
8. Add ginger, garlic, green chilli and onion. Saute it for sometime then add all the veggies such as carrots, beans and capsicum. Stir fry for 5 mins.
9. Veggies should be finely chopped so it will get cooked soon.
10. Add the cooked rice, vinegar, salt , sugar, pepper powder. Toss in a high flame and mix everything well.
11. Garnish with spring onion and serve hot!!
