Description:
A delicious and flavourful mint rice is prepared by making a grounded mint and coriander leaves paste cooked in basmati rice.
Adding cashews to the dish gives the rich flavour.Kids love to have it for lunch box . It goes well with curd raita or egg curry. It will make a wholesome dish for the kids. Usually kids don’t prefer to have mint and coriander leaves in any dishes bt will definitely enjoys this dish. Mint aids in digestion and keep the body hydrated.
Ingredients:
Basmati rice - 1 cup
Ghee - 2 tbsp
Oil - 2 tbsp
Cinnamon - 1 small stick
Cardamom - 1
Clove - 1
Cashew - 10
Mint leaves - 1/2 cup
Coriander leaves - 1/4 cup
Shallots - 1/4 cup
Onion - 2 (finely chopped)
Green chilli - 2
Jeera -1 tsp
Ginger garlic paste - 1 tsp
Preparation:
1. Wash the rice and soak it for about 15 mins.
2. Meanwhile clean the mint leaves and coriander leaves, wash and strain in a colander and keep it aside.
3. In a mixer jar, add mint leaves, coriander leaves, green chilli , shallots, jeera.
4. Add water and make a fine paste.
5. In a pressure cooker, add ghee, oil, cinnamon, cardamom ,clove and cashews.
6. Then add finely sliced onion and ginger garlic paste..
7. Saute till the onion turns golden brown and raw smell of ginger garlic has to gone.
8. Now add grounded paste into it.Mix well till it leaves oil . It will give nice aroma to the dish.
9. Add water and salt.. den add soaked rice into it.
10. Pressure cook for just 1 whistle and switch off the flame.
11. Open the pressure cooker, give a gud mix so that the masala won’t settle in the bottom .
12. Delicious and flavourful Mint rice is ready to serve!!
