Description:
Mushroom stir fry recipe made using mushroom with caramelised onion and some spices. Cashews add the crunchiness and taste to the dish .
You can use this recipe as a base and substitute mushroom with paneer, bell pepper and boiled eggs. Serve this as a side dish for chapathi or used as a stuffing in sandwiches or rolls. Both tastes delicious!!
Ingredients:
Mushroom - 1 1/2 cup (chopped)
Oil - 2 tbsp
Cumin seeds- 1/2 tsp
Ginger garlic paste- 1 tsp
Onion - 2 (largely slit)
Garam masala- 1/2 tsp
Turmeric powder- 1/4 tsp
Chilli powder- 1 tsp
Pepper powder- 1 tsp
Curry leaves- 1 spring
Cashew - 1/4 cup (soaked)
Preparation:
1. Heat oil in a pan. Add half teaspoon cumin seeds.
2. When they crackle, add 1 teaspoon ginger garlic paste and saute for about a minute until aromatic.
3. Add onion and Stir fry .You want you can add 1 slit green chili here.
4. Stir often and fry until they turn golden but not burnt.
5. Stir fry until the onion becomes transparent.
6. Add 1 spring curry leaves, garam masala, red chili powder, turmeric and pepper powder.
7. Saute for 1 to 2 mins on a low flame until the curry leaves begin to smell good.
8. Add 1½ cups sliced mushrooms and soaked and drained cashews . Sprinkle salt evenly. Don’t worry about the salt at this stage, your mushrooms won’t turn soggy.
9. Stir fry for 2 to 3 mins on a high heat. If the mushrooms let out moisture continue to stir fry on the high heat. If the mushrooms are dry then reduce the heat and stir fry until they turn tender, cooked but not soggy.
10. Make sure you don’t overcook the mushrooms. When the mushrooms are done, you should also smell the caramelized onions. Taste test and adjust salt if needed.
11. Serve Mushroom fry with rice or chapathi.
