Kavuni Arisi sweet is a chettinad special sweet made for weddings& festive occasions. Kavuni arisi sweet is made by cooking black rise or kavuni arisi with sugar, coconut milk , coconut gratings and flavoured with cardamom.This black rice or kavuni arisi or kavuni puttarisi has a beautiful purple shade after its cooked as you can see.My mom made this and I so loved it.So this kavuni arisi sweet recipe is from my Mom.To enhance the flavour i have added coconut milk makes it rich and tasty.
Ingredients:
Kavuni arisi- 1 cup
Coconut milk- 1 cup
Water - 1 1/2 cup
Shredded coconut- 1/2 cup
Ghee - 2 tbsp
Powdered jaggery- 1 cup
Cardamom powder- 1/4 tsp
Preparation:
1. Black rice is a very hard rice. The rice needs to be soaked over-nite. Wash the rice and soak it in lots of water for 10-12 hours. Drain the water used for soaking.
2. Transfer the rice to a blender and add 2 tbsp of water , coarse grind it. I blend the rice since it’s easy to cook and the texture would be good.This step is optional.
3. Add the rice to the pressure cooker. The water ratio is 1 rice : 1.5 water. Add in the water to the cooker. Cover the cooker and cook for exactly 5 whistles.
4. It should not become mushy. The rice should still have a bit of a bite but still completely soft on the inside.
5. Once the pressure releases, check the rice if it’s cooked.
6. Now add 1 cup of coconut milk into it, it adds tastes to the dessert.
7. Allow the rice to cook in coconut milk fa some time till it gets thick.
8. To the same pan add in the fresh shredded coconut, powdered jaggery and cardamom. The mixture will loosen up immediately after adding jaggery powder.
9. Simmer the mixture in the pan for 5-10 minutes until the mixture becomes thick. Add in the ghee and switch off the flame.
10. Healthy and Tasty kavuni arisi dessert is ready!!!!!!
