Description:

Reshmi Chicken Masala is a delicious and popular dish of North Indian Cuisine. The chicken is marinated with curd and few spices and then cooked in a rich creamy gravy of cashew nuts, spices and herbs. Marinating chicken with curd results in a tender juicy chicken which melts in our mouth. This recipe pairs very well with naan, tandoori roti or any Indian flatbread or jeera rice. Serve delicious Reshmi Chicken Masala at parties or on a special weekend dinner and guests will love it.


Marination: 

Chicken- 1/2 kg 

Turmeric powder- 1/2 tsp 

Chilli powder- 1 tsp 

Coriander powder - 1 tsp 

Ginger garlic paste - 1 tbsp 

Yogurt- 5 tbsp  

Fresh curd - 1 tbsp  

Green chilli (chopped) - 2 

Coriander leaves (chopped)  

Lemonade juice- 1 tsp 

Salt - 1 tsp  

Onion - cashew paste:

Onion - 2 (sliced) 

Cashew- 10 

Whole spices:

Cardamom- 3 

Clove- 3 

Cinnamon stick- 1 

Bay leaves- 2 

Other ingredients:

Garam masala- 1/2 tsp 

Kasuri methi- 1 tbsp  

Oil 

Salt

Preparation:

1. Marinate the chicken with the items mentioned above and infused smoke to get a barbecue flavour. Cover and set aside for 30 mins 


2. Heat oil in a pan, add sliced onion and cashew saute it well till the onion turns brown.. Transfer it to a plate and allow it to cool down .. Blend into a fine paste by adding water. Keep it aside .


3. Heat oil in a pan, add whole spices. Wen it splutters add onion- cashew paste, saute it in a medium flame till the oil separates.


4. Now add the marinated chicken and give a gud mix.

 
5. Cook in a medium flame for 7-8 mins till the chicken changes the color and oil separates.


6. Add required salt and allow it to cook for some time.

 
7. Now add garam masala, and mix it well with the chicken.

 
8. Add some water to it and let it boil for sometime or till the chicken turns tender.


9. Finally Add Kasuri methi and switch off the flame..


10. Serve it with paratha, idiyappam, naan, tandoori roti and jeera rice …. Serve hot and enjoy!!!
