  Chicken Chinthamani Description: Chicken Chinthamani is a delicious, roasted-style chicken in which small pieces of chicken cooked with shallots, dry red chilli (deseeded) and aromatic curry leaves. Chinthamani Chicken is widely famous in kongunadu region. Traditionally it is prepared in sesame oil in iron kadai. The shallots and dry red chilli gives flavour to the chicken and curry gives gud aroma makes it a wholesome dish. Ingredients: Chicken- 500 gms Sesame oil - 3 tbsp Shallots- 1 cup ((peeled) Dry red chilli- 10 (deseeded) Curry leaves- 1 spring  Ginger garlic paste- 1 tbsp Turmeric powder- 1/2 tsp Chilli powder- 1 tsp Salt - 1 tsp  Preparation: 1. Clean and wash the chicken. Cut the chicken into small bite sized pieces. Set aside. 2. Heat oil in the pan , add in the curry leaves and the dried red chillies (deseeded). 3.
